1: Maple Balsamic Salmon

Food on the grill can also be quite sophisticated if you invest a little time into each dish and the presentation. This amazing Christmas BBQ food can be served with a fresh salad or with potatoes and butter.


  • ¼ cup of orange juice
  • ¼ cup of maple syrup
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of olive oil
  • 2 chopped garlic cloves
  • Salmon steaks, one per guest
  1. Mix the orange juice, maple syrup, vinegar and garlic in a pan and gently bring to the boil. Cook for 5 minutes.
  2. Add the olive oil to the pan.
  3. Prepare the salmon fillets by placing them onto aluminium wrap and glaze with the sauce.
  4. Add sea salt and crushed black pepper.
  5. Using the aluminium wrap, make sure each piece of salmon is sealed inside the pocket of aluminium without the top of the salmon fillet touching the wrap.
  6. Pop the salmon onto the grill and cook for around 10 minutes.

2: Mint Lamb On The Grill

To grill food for family and friends on Christmas Day, make sure to invest in a high-quality piece of lamb. This seasonal dish needs to be prepped in advance but can have you all digging in within 6 minutes on the grill.


  • Leg of lamb
  • Olive oil
  • Crushed garlic
  • Balmasic vinegar
  • Mint 


  • Whisk some olive oil with garlic, balsamic vinegar and mint in a large bowl.
  • Marinate the leg of lamb with the sauce.
  • Allow to marinate for at least an hour before you start to grill it.
  • Once you’re ready to grill the meat, barbecue for 3 minutes on each side until cooked through and tender.
  • Serve with homemade garlic and lemon mayonnaise.

To make these gooey cookies, you’ll need an 8-inch cast-iron skillet and your BBQ. First, prepare the cookie dough by following the recipe below and then spread into the skillet and grill over a low to medium heat for 10 to 15 minutes, or until you can smell that rich gingerbread aroma.


  • 1 tablespoon of butter softened
  • 1 cup of all-purpose flour
  • 1 teaspoon of ginger
  • ½ teaspoon of baking soda
  • ½ cup of sugar
  • 1 medium egg
  • ¼ teaspoon of cinnamon and ¼ teaspoon of ground cloves
  • ⅓ cup of shortening
  • Pinch of salt
  • 2 tablespoons of maple syrup or molasses

Optional: Add a cup of chocolate chips before you cook for a gooey chocolate centre, and top with ice cream when ready to eat.


  1. Mix the flour, ginger, cinnamon, cloves baking soda, and salt in a large bowl.
  2. Whisk the shortening and sugar together using an electric mixer. Add the egg and the maple syrup or molasses and mix until creamy and light.
  3. Start to add the flour mix and continue to beat with the electric mixer, or switch to a wooden spoon.
  4. Add to your 8-inch cast-iron skillet and cook on the grill for 10 to 15 mins.
